Black Beans: Trace Mineral Powerhouses, that should be part of your diet

It’s a little known fact that, as well as being full of fiber and protein, black beans are also loaded with essential vitamins and minerals as well.  They are cheap, easy to cook (even easier to buy cooked in a tin), they store for ages, and are widely available – so it’s amazing that these little black gems aren’t a broader part of everybody’s diet.

How much molybdenum are you getting, for example?  I’ll bet you didn’t know that a single cup portion of black beans will more than meet your daily requirement for this essential trace mineral.  We don’t need a lot of molybdenum, but we definitely need it – it helps with detoxification and supports the liver to function effectively.  It specifically helps to remove sulphites from the body, these are chemicals commonly used in preserving food – so if your diet regularly includes processed and ready-made meals, then chances are you eat a lot of sulphites – make sure you eat enough molybdenum as well!  Making black beans a regular part of your diet is an easy and tasty way to do this.

Be the Star of your Neighborhood

If your teenagers are never home because they’re always hanging with friends, bring them back home by setting up shop as the best juice maker in the neighborhood. Gather yourself a decent supply of fresh apples, oranges, grapes and other fruits and search out some good juice recipes on the Internet. From Bad Food to Healthy Eating

There was a time when I considered myself the unhealthiest eater in the world.  It was actually a label that I displayed proudly to my friends as I bragged that I could eat anything without gaining weight.  I consumed pizza and burgers with little abandon and going out to restaurants was a usual occurrence for me.  I loved to eat anything that I could get my hands on it and it wasn’t unusual to find me snacking on some sort of junk food at all hours during the day.  I was recently informed that I had to adopt a low cholesterol diet and healthier eating plan, and at first I fell into an immediate depression.  It seemed like my doctor was basically saying that I was getting old and it was hard not to feel like it was a death sentence.  But in the overall scheme of things, I realized that I could not maintain my bad eating habits forever so I embarked on changing my routine.  It was extremely difficult at first because my habits had developed over such a long period of time, but I have also discovered several tricks to help me along.

The first thing I did was to maintain a healthy eating journal so that I had a resource that I could refer to.  I put all sorts of information in my journal including various tidbits on foods high in cholesterol in addition to healthy alternatives.  I also use my journal as an emotional sounding board so that I can record all of my thoughts along the process.  I have found it extremely helpful to be able to express myself, and I couldn’t do it if it weren’t for my friends.  I think it’s important to have a good support system to help you along if you are trying to change your eating habits because the process can be quite difficult.  Most importantly, I have done a lot of research on food and nutrition and my because finding is that I don’t have to sacrifice everything in order to eat healthy.  If I make smart choices and cook for myself there are plenty of ways to maintain my love of food while being healthy at the same time.

Recipe For A Vegan Tiramisu

People on a vegan diet have the right to have a slice of tiramisu as well. This vegan version of the delicious Italian dessert is different from the original tiramisu recipe, but even the fussiest person about Italian food will hardly notice the difference.

As you may already know, the main principle of veganism is to avoid anything that has an animal origin. This is why in this recipe we will avoid mascarpone cheese and eggs, and we will use soy cream milk instead of dairy. Also, you will need to get hold of vegan biscuits to use instead of savoiardi, whose main ingredient is eggs.

Ingredients for six people.

4 cups of coffee
300ml (10 fl oz) whipping soy cream
100gr (3.5 oz) sugar
1 tbsp corn flour
500gr (1.1 oz) tofu
1 tsp soy milk
1 tsp lemon zest
400gr (0.8 lb) vegan biscuits
Cocoa powder
A handful of chocolate flakes

Prepare the coffee, pour it in a large bottomed bowl and let it cool until it’s lukewarm. Mix the sugar with the corn flour and add a couple of tablespoons of water at room temperature. Stir until the ingredients come together. Mix tofu, lemon juice and a tablespoon soy milk until you get a lump-free mix. Add this mix to the corn flour. Whip the soy cream and add it to the tofu. Dip the biscuits in the coffee, making sure the are not too soft or they will break. Cover the bottom of a rectangular casserole with a thin layer of cream, then a layer of biscuits. Dust with cocoa powder and chocolate flakes then start again. Continue with a second a third layer until you reach the top of the casserole. Finish with cream. Put the cake in the fridge for 5 hours, then dust with cocoa powder and serve cold.
